While I was at the play last night, Nate and the kids decorated his truck for the race tonight. I do have to say it looks pretty good! So sad I am going to have to miss it. I wish I could be there.

I asked Gracie if she was going to go watch her dad race, and she said "I already saw him make the truck fly in the air!"
YIKES! I know I am a little scared too!

Redneck Fun!

So this is what the Severe's do for an exciting Saturday Family Activity.....





All of my dads chickens had mites and were losing there feathers and not laying as many eggs, so they had to catch them and put a special powder on them to kill the mites. Gross!!! You notice I am not catching chickens. HaHa! I decided I would be better behind the camera and not in front of the camera.

Recipes

Cow Boy Caviar

5 - 6 Roma Tomatoes
3 Green Onions
1 can of Corn
handful of Cilantro
2 Minced Garlic clove
1 can of Black eyed peas
4-5 Avacodos

You can change this recipe as much as you want. If you want more of something, than add more, or if you want less of something, don't add as much!

Chop up tomatoes, onions, minced garlic, and cilantro. Drain and rinse the black eyed peas and corn. Mix together.

Add a couple of teaspoons of Tapitio (if you want it spicer, add more), a couple of teaspoons of red wine vinagar, and salt to taste.

When everything is chopped and you have added the tapito and the vinegar, than cut up your avacodo's and carefully mix them in. Always add avacodos last so they don't get all mushy.


Fruit Pizza

This is my mother in laws recipe, and I loved it so I thought I would share!

CRUST: 1/2 CUP BUTTER
1 1/2 CUPS SUGAR
MIX ABOVE INGREDIENTS

ADD: 2 EGGS
2 3/4 CUPS FLOUR
2 TEAS. CREAM OF TARTAR
1 TEAS. BAKING SODA
1/4 TEAS. SALT
SPREAD ON A 13X17 GREASED COOKIE PAN.
BAKE 400 DEGREES 10-15 MINUTES COOL.

BEAT TOGETHER:
12 OZ. CREAM CHEESE
3/4 CUP POWDERED SUGAR
3 TBL. PINEAPPLE JUICE
FROST COOLED CRUST.

TOP WITH YOUR CHOICE OF:
PINEAPPLE TIDBITS
MANDARIN ORANGES
SLICED STRAWBERRIES
SLICED KIWI FRUIT
RED GRAPES
BANANA SLICES
RASPBERRIES

REFRIGERATE.
